This Week’s Meals at the Vintage Vista

I’ve decided to post our meal planning strategy for each week (when we get to it!). Meal planning is so intimidating but it SAVES us. We do so much better when we are strategizing and buying the right ingredients. It cuts down on waste, allows us to do more home cooking and choose healthy options. So here is our plan for this week (which is less than usual given the holidays!).

Sunday: Pasta with Vegetables and White Bean Pesto

While you are cooking up your favorite pasta, prep the vegetables. We like roasting brussel sprouts and/or bok choy but it is up to you.  If you choose to roast a vegetable, be sure to clean it thoroughly and cut in to bite size pieces. Place on a baking sheet covered with foil and coat in olive oil and salt. (Lightly salt the vegetables. You can always add more later if needed.) Place the vegetables in to a pre-heated oven at 425 and roast for about 10 minutes. While the pasta is cooking and the vegetables are roasting (if you choose to prepare them that way), you can start on the white bean pesto. Place 1 can of white beans (Great Northern Beans are our pick) in to your blender. Add 2 tbsp of water, 1/4 cup of pesto and a handful of fresh basil if you have it. Blend until smooth and set aside. Once the pasta is cooked, cover with white bean pesto and then top with vegetables.

Monday: Lentil Vegetable Salad 

You can soak the lentils ahead of time or just cook them when you are ready to make the meal. It will take anywhere from 25-45 minutes depending on the kind of lentils. Here is the recipe! It makes a TON so we are going to have leftovers for sure 🙂

Tuesday: We are having dinner out

Wednesday: Christmas Eve with the family

Thursday: Leftover Soup

We have two soups that we made last week and froze half of for leftovers this week. Here are the recipes for each of them. We did a Curried Red Lentil Soup and Crockpot Chicken Tortilla soup!

Friday: Homemade Pizza

We love making our own pizza. We make our own pizza crust but you can also buy pizza crust from the store! (We make our own because we are gluten free so you can’t find pre-made gluten free pizza crust in any stores we’ve looked at.) We like to find inspiration from some of our favorite pizza shops but a simple mozzarella, fresh tomatoes and fresh basil pizza is a fan favorite.
